Unsettled, cool, and sometimes wet weather resulted in erratic fruit set but from the end of January onwards, the weather was settled and very dry. Aside from a few days of heat in March, the season continued, with the moderate temperatures and mild conditions allowing for picking all varieties at the ideal moment.\u003c\/span\u003e\u003c\/div\u003e\n\u003cdiv\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv\u003e\u003cspan class=\"font-size-18 lh-1\"\u003eWinemaking\u003c\/span\u003e\u003c\/div\u003e\n\u003cdiv\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv\u003e\u003cspan class=\"font-size-16 lh-1\"\u003eThe Shiraz component was hand-picked early morning in the morning, a good few days before the rest of the vineyard was picked. This was intentional as we wanted to retain freshness and energy in the wine.\u003c\/span\u003e\u003c\/div\u003e\n\u003cdiv\u003e\u003cspan class=\"font-size-16 lh-1\"\u003eThe grapes were rapidly transferred to the winery where 25% of the bunches were left intact and the balance gently de-stemmed. After a couple of days of pre-fermentation maceration, the natural fermentation began and was accompanied by two hand plunges a day to gently extract colour and tannin.\u003c\/span\u003e\u003c\/div\u003e\n\u003cdiv\u003e\u003cspan class=\"font-size-16 lh-1\"\u003eWhen fermentation was complete, the wine was left on skins (and stems) for another 5 days before transferring to French oak (50% new puncheons) where it completed malolactic fermentation and 12 months of maturation.\u003c\/span\u003e\u003c\/div\u003e\n\u003cdiv\u003e\u003cspan class=\"font-size-16 lh-1\"\u003e\u003cbr\u003e\u003c\/span\u003e\u003c\/div\u003e\n\u003cdiv\u003e\u003cspan\u003eThe Grenache component came from and old vine site in the Ebenezer sub-region of the Barossa.
