Original Shiraz 2021

Our Fathers Shiraz 2021

Vintage Conditions

2021 has widely been touted as the greatest vintage of the century so far. The quality of the fruit relied upon moderate weather conditions brought about by the start of La Nina weather systems that cool much of Australia. After the hot, dry season of 2020, and the resultant small crop, 2021 was unusual in that crops were good and quality was great. 2021 will also be remembered as being Covid affected and the start of vintage began with a 15 night stay in hotel quarantine. Fortunately, the vintage was worth it!

Winemaking

The hand-picked grapes were rapidly transferred to the winery where 35% of the bunches were left intact and the balance gently de-stemmed. After a couple of days of pre-fermentation maceration, the natural fermentation began and was accompanied by two hand plunges a day to gently extract colour and tannin.
When fermentation was complete, the wine was left on skins (and stems) for another 4 days before transferring to French oak (30% new) where it completed malolactic fermentation and 18 months of maturation.
The resulting wine exhibits a dense yet succulent, spicy blackberry fruit with hints of woodsmoke and tobacco. The 2021 shows remarkable balance of ripe blackberry, black olive and spice, countered by silky smooth tannins, hints of tobacco and liquorice.
